KETO CAULIFLOWER RICE RECIPE

 

When following a keto lifestyle, the very first things you might miss during a meal are the sides. I know that has been the experience for me. I realize that my stomach doesn’t really miss having sides but my brain does. I am so accustomed to having sides with my main dish that mentally I feel like something is missing with my meal.

Most of the time the only side I used to have was rice, so I know my stomach is not necessarily craving rice, because frankly, rice is not so delicious that I can justify missing it. To alleviate this mental expectation of a side dish I decided to prepare myself a rice alternative…cauliflower rice.

 

I know, cauliflower rice sounds weird but believe me the side dish does an excellent job at substituting regular rice.

 

Here’s a very simple recipe that is a great Keto Rice Alternative..

 

  1. Place cauliflower florets (without stems) in a food processor and pulse until broken down into rice-size pieces. Alternatively, if you don’t have a food processor you can use a cheese shredder, it will take a little longer but it will give you similar results.
  2. Heat olive oil in a skillet over medium heat; add cauliflower ‘rice’, salt, and pepper. Cover skillet and cook until heated through, 3 to 5 minutes. Remove lid and fluff ‘rice’ with a fork.

 

Voila! That simple!

 

Now you can use this rice as a side dish or to make A Keto Chicken Fried Rice.
