LOW-CARB CAULIFLOWER CHICKEN FRIED “RICE” RECIPE

 

The keto diet may seem more restrictive than it really is. The reality is that most of the unhealthy foods that we are used to eating can be easily be replaced with a healthier more “keto” friendly alternative and although it may not be exactly the same, the alternatives are much healthier and they help you not miss the non-keto lifestyle.

 

Here is a great alternative to the traditional Chicken Fried Rice. I personally enjoy this recipe when I have an urge for Chinese food. In this recipe, I’ve not only substituted the rice but I’ve also substituted the soy sauce with Liquid Aminos since most soy sauces have gluten and MSG and I can’t have either.

 


 

INGREDIENTS

1 chicken breast, diced

1 Cauliflower Head or 2 cups Cauliflower Rice

2 cups peas & carrots

1 cup chopped scallions, light and green parts separated (you’ll need 5-6 scallions)

 

2 tablespoons Liquid Aminos (or you can use actual soy sauce if you prefer)

2 teaspoons black pepper

1 recipe cauliflower rice

3 eggs, beaten

 

Directions:

Cauliflower Preparation

  • Remove all leaves and cut the cauliflower into small florets.
  • Place the florets in a food processor and blend until they are a rice-like texture. Be careful not to over process or it may turn mushy. Set aside, and drain excess moisture with a towel, if desired.
  • In a large saucepan over medium-high heat, cook the chicken until no pink is showing. Add the peas, carrots, liquid aminos (or soy sauce), and black pepper.

Main Dish Preparation

  • In a large saucepan over medium-high heat, cook the chicken until no pink is showing. Add the peas, carrots, liquid aminos (or soy sauce), and black pepper.
  • Stir until most of the liquid has reduced, then add the cauliflower. Cook for about 3-4 minutes until the vegetables and chicken are incorporated evenly into the cauliflower.
  • Spread the rice towards the edge of the pan, creating a well in the center.
  • Pour the beaten eggs into the well, stirring only the eggs until they are cooked.
  • Fold the eggs into the rice.

That’s it, it’s ready to serve! Serves 3-4.
